Improved Effects of Fermented Stockfish of Alaska Pollack Skin (FSAP H-¥°, ¥±) on Adiposity and Serum Lipids Levels in High Fat-Induced Obese Mouse

Abstract
This study investigated the effects of fermented stockfish of Alaska pollack (Theragra chalcogramma) skin (FSAP) on the adiposity and serum lipids levels in mice. FSAP H-¥° was made by a traditional roasting manufacturing process, KuGeungKuPo. FSAP H-¥± was then produced by solid fermentation with sticky rice. To observe the effects of body weight control on the DIO (diets induced obesity) model. The experimental animals were divided into seven groups containing normal, negative control (diet induced obesity, N.C), positive control group (oral administration of orlistat, P.C), DIO oral administration (FSAP H-¥°), DIO oral administration H-¥± (FSAP H-¥±) L (5%), M (10%), and H (15%). As a result, the body weight gain during the 6-week period was significantly lower than the N.C group in dose-dependent manner. The biochemical parameters, total cholesterol decreased significantly in dose-dependent compared to the N.C group. The levels of triglyceride and low density lipoprotein (LDL)-cholesterol also showed similar trends. In particular, the blood glucose tolerance test showed a dose-dependent improvement in FSAP H-¥° and ¥± compared to the N.C group. Overall, the improvement of the biochemical markers such as the total cholesterol, LDL-cholesterol, and high density lipoprotein-cholesterol in blood showed a better or similar tendency in the FSAP H-¥° and ¥± group than the P.C group. H&E staining of the liver and epididymal fat showed improvement in FSAP H-¥° and ¥±. The size of fat in the epididymis was also decreased. Therefore, body weight control, blood glucose, and serum lipid improvement of the FSAP H-¥° and ¥± were achieved by the high fat fed obesity model. These results suggest that fermented stockfish of Alaska pollack skin is a more promising nutraceutical or medicinal agent for the inhibition of obesity or inflammation-related diseases.
